Explanation

Soba

Thin, brown buckwheat noodles, served hot in a soup, or cold.

Udon

Thicker white wheat noodles, served hot in a soup, or cold.

Ramen

Chinese-style wheat noodles, usually served in a hot broth.

-don

Served over a bowl of rice. For example, oyaka-don (chicken and egg over rice)

-katsu

Meat covered in breadcrumbs, then fried. For example, tonkatsu (fried pork cutlet)

-age

Deep fried. For example, karaage (deep-fried chicken)

-yaki

Grilled or stir-fried. For example, yakitori (grilled chicken skewers) or yaki-soba (stir-fried noodles)

-tempura

Lightly battered and deep fried. For example, ten-don (tempura on a bowl of rice)

‐teishoku

Set meal including rice, pickles and miso soup. For example, tonkatsu teishoku (fried pork cutlet set meal)

-sarada

Salad. For example, yasai-sarada (vegetable salad)
