Curried Chicken & Rice Salad

A delicious, simple, and healthy chicken salad.

Ingredients

Dressing:

  • ½ cup olive oil
  • ½ cup wine vinegar
  • 1 Tbsp sugar
  • 1 Tbsp curry powder
  • salt & pepper to taste

Salad:

  • cups diced cooked chicken
  • cups cooked rice
  • ½ cup slivered green peppers
  • 2 Tbsp diced pimientos (a.k.a. pimentos, or cherry peppers)
  • 2 Tbsp seedless raisins
  • 2 Tbsp finely chopped onion

Instructions

Dressing:

  • In a small bowl, combine olive oil, wine vinegar, sugar, curry powder, salt, and pepper.

Salad:

  • In a salad bowl, combine chicken, rice, green peppers, pimientos, raisins, and onion.
  • Pour dressing over salad, and toss lightly.
  • Mound salad on individual lettuce-lined plates, and garnish with pimiento strips.
