Chicken Salad with Cranberries, & Walnuts/Pecans

A delicious and healthy chicken salad.

Ingredients

  • 3-4 chicken breasts cooked, and chopped
  • 1 cup toasted walnuts or pecans chopped
  • 1 cup dried cranberries (Craisins)
  • 1 small shallot, or yellow onion diced
  • 2 stalks celery diced
  • cup mayonnaise
  • 3 Tbsp red wine vinegar
  • salt & pepper to taste

Instructions

  • Combine the ingredients in a large bowl
  • Chill before serving.
