Chicken Salad with Cranberries, & Walnuts/Pecans
A delicious and healthy chicken salad.
Servings: 4 to 6
Ingredients
- 3-4 chicken breasts cooked, and chopped
- 1 cup toasted walnuts or pecans chopped
- 1 cup dried cranberries (Craisins)
- 1 small shallot, or yellow onion diced
- 2 stalks celery diced
- ⅔ cup mayonnaise
- 3 Tbsp red wine vinegar
- salt & pepper to taste
Instructions
- Combine the ingredients in a large bowl
- Chill before serving.
