Granola [Video]

My lovely wife Linda has been making this Granola recipe for many years now. It's really good.

Ingredients

  • ¼ cup, plus 2 tablespoons dark brown sugar
  • ¼ cup, plus 2 tablespoons maple syrup
  • ¼ cup vegetable or coconut oil
  • ½ teaspoon salt
  • 1 cup slivered almonds or pecans, or walnuts
  • ¾ cup shredded sweet coconut
  • 3 cups rolled oats
  • 1 teaspoon cinnamon (or more)
  • 1 cup golden raisins or dark raisins, or Craisins

Optional additional ingredients:

  • cashews
  • raw, unsalted, sunflower seeds
  • chopped walnuts
  • ground cardamon
  • chopped crystalized ginger

Instructions

  • Preheat oven to 250℉.
  • Place oats in a large bowl.
  • In a separate smaller bowl, combine maple syrup, oil, and salt.
  • Pour liquids over the oats, and combine well.
  • Spread mixture over two baking sheets.
  • Bake for 30 minutes, stirring and checking every 10 minutes to achieve an even color.
  • Remove from oven, and transfer into a large bowl, and let cool.
  • Add the remaining ingredients, and mix well.
  • Store in one-quart Mason jars, in the refrigerator.
