Baked Honey Miso Salmon
Juicy honey miso salmon baked until sticky and caramelized is the perfect easy dinner recipe, served with rice and greens, or whatever other accompaniments you prefer.

Ingredients
- 1 lb (500g) salmon fillets
Marinade:
- ½ cup mirin (Mirin is a Japanese sweet rice wine)
- 2 tbsp rice vinegar
- 4 tbsp miso paste
- 3 tbsp honey
- 1 tbsp soy sauce
- 1 garlic clove finely grated
Instructions
- Preheat the oven to 220ºC/430ºF and switch on the oven's broiler/grill. (*See Note)
Marinade:
- In a small bowl, whisk together the marinade ingredients: mirin, rice vinegar, miso paste, honey, a tablespoon of soy sauce and grated garlic.
Prepare Salmon:
- Pour the mixture over the salmon and allow to marinate for 10-20 minutes.
- Line a baking sheet with parchment paper.
- Remove the salmon from the marinade and place on the sheet pan, skin side down, then brush over the marinade.
- Place on the middle rack of the oven and allow to bake (and broil) for 10-12 minutes until the salmon is cooked through and caramelized.
- Remove the salmon from the oven then serve with rice and greens of your choice.
Notes
*Our oven does not allow you to turn on the Bake and Broil settings at the same time. I compromised, and selected the Broil setting, turning down the temperature to 430ºF. Then, rather than relying on a baking time time estimate, I checked the temperature of the salmon with an instant-read thermometer every 15 minutes or so until the salmon registered about 165ºF. Taking the salmon out early, at around 160ºF, and then letting it rest for about 5 minutes, would allow it to reach the right temperature.
