Curried Chicken & Rice Salad
A delicious, simple, and healthy chicken salad.

Dressing:
- ½ cup olive oil
- ½ cup wine vinegar
- 1 Tbsp sugar
- 1 Tbsp curry powder
- salt & pepper to taste
Salad:
- 1½ cups diced cooked chicken
- 1½ cups cooked rice
- ½ cup slivered green peppers
- 2 Tbsp diced pimientos (a.k.a. pimentos, or cherry peppers)
- 2 Tbsp seedless raisins
- 2 Tbsp finely chopped onion
Dressing:
In a small bowl, combine olive oil, wine vinegar, sugar, curry powder, salt, and pepper.
Salad:
In a salad bowl, combine chicken, rice, green peppers, pimientos, raisins, and onion.
Pour dressing over salad, and toss lightly.
Mound salad on individual lettuce-lined plates, and garnish with pimiento strips.
