Spinach Tortellini Soup
This recipe was given to me by a co-worker.

- 2 Tbsp oil (optional)
- 1 onion chopped
- 4 cloves garlic minced
- 2 slices bacon chopped
- 8 cups chicken stock
- 2 cans stewed Italian style chopped tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- parsley flakes
- 9 oz cheese tortellini
- 3 cups packed shredded spinach
- Parmesan cheese to taste
In a large saucepan, sauté the onion, garlic, and bacon in the oil until the onion is soft.
Add chicken stock, tomatoes, basil, oregano, and parsley flakes. Heat.
Add tortellini, and cook according to the tortellini directions.
Add the spinach, and heat until it wilts.
Serve with Parmesan cheese.
