Spinach Tortellini Soup
This recipe was given to me by a co-worker.
Servings: 8
Ingredients
- 2 Tbsp oil (optional)
- 1 onion chopped
- 4 cloves garlic minced
- 2 slices bacon chopped
- 8 cups chicken stock
- 2 cans stewed Italian style chopped tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- parsley flakes
- 9 oz cheese tortellini
- 3 cups packed shredded spinach
- Parmesan cheese to taste
Instructions
- In a large saucepan, sauté the onion, garlic, and bacon in the oil until the onion is soft.
- Add chicken stock, tomatoes, basil, oregano, and parsley flakes. Heat.
- Add tortellini, and cook according to the tortellini directions.
- Add the spinach, and heat until it wilts.
- Serve with Parmesan cheese.
