Orzo and Feta Salad
A delicious salad for any gathering!

Dressing:
- β
cup olive oil
- 2 Tbsp red wine vinegar
- 3 cloves garlic minced
- 1 tsp dried dill
- ΒΌ tsp salt (or not)
- ground black pepper to taste
Any (or all) of the following:
- 4 scallions thinly sliced
- 1 medium zucchini diced
- 1 stalk celery thinly sliced
- 1 red pepper finely diced
- β
cup minced fresh parsley
- β
cup minced fresh basil
- broccoli mini florets blanched
- chives fresh or dried
Finally...
- 4 oz. crumbled Feta cheese and/or Chevre
Cook orzo according to package directions. Drain and rinse under cold water. Drain thoroughly and place in a bowl.
Combine Dressing ingredients and pour over the cooked orzo and mix well.Salad may be prepared to this stage a day ahead. Add the remaining ingredients and mix in well.
Refrigerate at least two hours before serving.
