Orzo and Feta Salad

A delicious salad for any gathering!

Ingredients

  • 1 lb box orzo

Dressing:

  • β…“ cup olive oil
  • 2 Tbsp red wine vinegar
  • 3 cloves garlic minced
  • 1 tsp dried dill
  • ΒΌ tsp salt (or not)
  • ground black pepper to taste

Any (or all) of the following:

  • 4 scallions thinly sliced
  • 1 medium zucchini diced
  • 1 stalk celery thinly sliced
  • 1 red pepper finely diced
  • β…“ cup minced fresh parsley
  • β…“ cup minced fresh basil
  • broccoli mini florets blanched
  • chives fresh or dried

Finally...

  • 4 oz. crumbled Feta cheese and/or Chevre

Instructions

  • Cook orzo according to package directions. Drain and rinse under cold water. Drain thoroughly and place in a bowl.
  • Combine Dressing ingredients and pour over the cooked orzo and mix well.
    Salad may be prepared to this stage a day ahead.
  • Add the remaining ingredients and mix in well.
  • Refrigerate at least two hours before serving.
