DeLuxe Green Beans

This recipe was from the kitchen of Linda's stepmother, Helen Mueller Rosenberg. It has been among Linda's recipes for many years, and is an old stand-by.

Ingredients

  • 3 cups green beans (sliced fresh or frozen)
  • 2 Tbsp butter (the original said margarine or butter)
  • cup chopped onion
  • 2 Tbsp flour (whole wheat)
  • ground black pepper to taste
  • 1 cup dairy sour cream
  • ½ cup grated Cheddar cheese
  • 1 can or pkg Fried Onion Rings (optional)

Instructions

  • Preheat oven to 350℉
  • Steam the beans until tender, about 10 minutes.
  • Melt butter in a small heavy pan. Add onion, and sauté until tender. Stir in flour and black pepper. When mixed, add sour cream carefully, and heat. Do not boil. Taste for seasoning.
  • Stir sour cream mixture into hot beans, and pour into a greased 1 quart casserole dish. Top with cheese, and onion rings (if using).
  • Bake about 15 minutes, until cheese melts and beans are hot.
