DeLuxe Green Beans
This recipe was from the kitchen of Linda's stepmother, Helen Mueller Rosenberg. It has been among Linda's recipes for many years, and is an old stand-by.

- 3 cups green beans (sliced fresh or frozen)
- 2 Tbsp butter (the original said margarine or butter)
- ⅓ cup chopped onion
- 2 Tbsp flour (whole wheat)
- ground black pepper to taste
- 1 cup dairy sour cream
- ½ cup grated Cheddar cheese
- 1 can or pkg Fried Onion Rings (optional)
Preheat oven to 350℉
Steam the beans until tender, about 10 minutes.
Melt butter in a small heavy pan. Add onion, and sauté until tender. Stir in flour and black pepper. When mixed, add sour cream carefully, and heat. Do not boil. Taste for seasoning.
Stir sour cream mixture into hot beans, and pour into a greased 1 quart casserole dish. Top with cheese, and onion rings (if using).
Bake about 15 minutes, until cheese melts and beans are hot.
