Briam Fournou (Baked Summer Vegetables)
Briam is basically roasted vegetables, the Greek way.

Ingredients

courgettes (zucchini squash)

potatoes
peeled
2.2
lb
aubergine (eggplant)
3
onions
sliced
2
green bell peppers
cut in thin slices

ripe peeled tomatoes
or 1 can of peeled tomatoes
salt, pepper
to taste

bunch
Italian parsley
finely chopped

cup
olive oil
Instructions
Clean and wash the zucchini, eggplants, and potatoes. Cut them into slices.
Put all the ingredients in a large baking pan or dish and stir to mix.
Bake the vegetables in a moderate oven for approximately 1½ hours. If necessary, add a little water during cooking.
Notes
Variation:
You may also add feta cheese, broken into little pieces.
