Briam Fournou (Baked Summer Vegetables)
Briam is basically roasted vegetables, the Greek way.
Servings: 6 to 8
Ingredients
- 2.2 lb courgettes (zucchini squash)
- 2.2 lb potatoes peeled
- 2.2 lb aubergine (eggplant)
- 3 onions sliced
- 2 green bell peppers cut in thin slices
- 2.2 lb ripe peeled tomatoes or 1 can of peeled tomatoes
- salt, pepper to taste
- 1 bunch Italian parsley finely chopped
- 1 cup olive oil
Instructions
- Clean and wash the zucchini, eggplants, and potatoes. Cut them into slices.
- Put all the ingredients in a large baking pan or dish and stir to mix.
- Bake the vegetables in a moderate oven for approximately 1½ hours. If necessary, add a little water during cooking.
