Briam Fournou (Baked Summer Vegetables)

Briam is basically roasted vegetables, the Greek way.
Servings: 6 to 8

Ingredients

  • 2.2 lb courgettes (zucchini squash)
  • 2.2 lb potatoes peeled
  • 2.2 lb aubergine (eggplant)
  • 3 onions sliced
  • 2 green bell peppers cut in thin slices
  • 2.2 lb ripe peeled tomatoes or 1 can of peeled tomatoes
  • salt, pepper to taste
  • 1 bunch Italian parsley finely chopped
  • 1 cup olive oil

Instructions

  • Clean and wash the zucchini, eggplants, and potatoes. Cut them into slices.
  • Put all the ingredients in a large baking pan or dish and stir to mix.
  • Bake the vegetables in a moderate oven for approximately 1½ hours. If necessary, add a little water during cooking.

Notes

Variation:
You may also add feta cheese, broken into little pieces.
