Author: P. J. Hamel, King Arthur Baking Company
- 1½ cups (170g) King Arthur White Whole Wheat Flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons (25g) granulated sugar
- 1 large egg
- 1½ cups (340g) milk, lukewarm
- 5 tablespoons (71g) butter, melted or ⅓ cup (67g) vegetable oil
- cinnamon, nutmeg, and ground ginger (optional)
Preheat your waffle iron while you make the waffle batter.
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl or large measuring cup, whisk together the egg, milk, and butter or oil.
Add the wet ingredients to the dry ingredients, stirring just until combined. The batter will be a bit lumpy; that's OK.
Cook the waffles as directed in the instructions that came with your waffle iron. (⅓ cup of batter for 3 minutes or more, per waffle)
Serve warm
Tips from our Bakers

If you or your family are very sensitive to whole wheat's sometimes assertive flavor, try substituting 2 tablespoons orange juice for 2 tablespoons of the milk in this recipe. The OJ tames whole wheat's potentially tannic taste, without adding any citrus flavor of its own.
