Simple Raspberry Bars
These Raspberry Bars are easy to make, and delicious.

Servings: 24 bars
- ½ cup sugar
- 1 cup butter room temperature
- 2 cups flour sifted
- dash salt
- 1½ cups raspberry jam (More is really needed. If possible find an 18 oz. jar.)
Preheat oven to 350F.
In the large bowl of the stand mixer, cream butter and sugar.
Gradually mix in flour and salt. The batter will be very thick.
Press ¾ of this mixture into an un-greased 9x13 pan. (The batter weighs about 20 oz; save 5 oz for crumbling.)
Warm the jam slightly in a microwave to make it spreadable. Then, spread it over the crust, making sure that no jam touches the baking pan (or use parchment paper).
Dot the remaining crumb mixture over the top.
Bake for 40 minutes, or more.
Cut into bars. Enjoy!
