Simple Raspberry Bars

These Raspberry Bars are easy to make, and delicious.

Equipment

  • 9"x13" baking pan
  • Stand mixer or other electric mixer

Ingredients

  • ½ cup sugar
  • 1 cup butter room temperature
  • 2 cups flour sifted
  • dash salt
  • cups raspberry jam (More is really needed. If possible find an 18 oz. jar.)

Instructions

  • Preheat oven to 350F.
  • In the large bowl of the stand mixer, cream butter and sugar.
  • Gradually mix in flour and salt. The batter will be very thick.
  • Press ¾ of this mixture into an un-greased 9x13 pan. (The batter weighs about 20 oz; save 5 oz for crumbling.)
  • Warm the jam slightly in a microwave to make it spreadable. Then, spread it over the crust, making sure that no jam touches the baking pan (or use parchment paper).
  • Dot the remaining crumb mixture over the top.
  • Bake for 40 minutes, or more.
  • Cut into bars. Enjoy!
