Phở-Inspired Beef Noodle Soup
This is the easy/lazy way to make Phở soup: Cheat, and use store-bought boxed Phở Beef Broth.The recipe was from the box.

- 1 container Simply Asia Vietnamese Inspired Pho Broth
- 2 ounces Thin Rice Noodles (I would use more)
- 6 ounces sirloin or ribeye steak shaved, or very thinly sliced
Bring broth to a boil in a saucepan on medium-high heat. Add Rice Noodles. Reduce heat to medium. Cook 3 minutes or until noodles are tender, stirring occasionally.
Add steak and cook 30 seconds to 1 minute or until desired doneness.
Sserve with desired toppings and sauces such as sliced chilis, fresh basil, cilantro, mint, bean sprouts, lime wedges, Sriracha or hoisin sauce.

This was my first time making Pho, so I cheated and used store-bought Pho broth. Despite all this, it came out pretty well.
I used two packets of broth, and something like 6 ounces of noodles. I had already bought about a pound of thin-sliced beef, which I had to try to shave with my hand knife. The shavings were a little thick. Next time, I'll buy shaved beef.
Our supermarket doesn't ever seem to have hot red peppers. Only green Jalapeños, or, if I'm lucky some green Serranos. Never anything red, unless it's in a packet where there are too many peppers for my needs. So, for this, I had to make do with a Jalapeño, sliced thinly with the insides removed.
So, we used sliced Jalapeños, some torn fresh basil leaves, bean sprouts and lime wedges for the toppings. Plus Sriracha and Hoisin sauce.
The plan for next time is to try Chicken Pho (Pho Ga), and make the broth from scratch.
