Marinated Cucumber, Tomato, and Onion Salad

For the Salad:
- 2 large cucumbers thinly sliced
- 4 medium tomatoes sliced into wedges
- 1 small red onion thinly sliced
- 1/4 cup fresh parsley chopped
For the Marinade:
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp lemon juice
- 1 tsp sugar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Prepare the vegetables: In a large bowl, combine the sliced cucumbers, tomato wedges, and thinly sliced red onion.
Make the marinade: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, sugar, dried oregano, salt, and black pepper until well combined.
Marinate the salad: Pour the marinade over the vegetables and toss gently to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to meld.
Garnish and serve: Before serving, toss the salad again and sprinkle with chopped fresh parsley.
