Greek Pasta Salad

Filled with fresh Mediterranean produce and flavors like briny olives, sweet tomatoes, fresh cucumbers, and sharp feta cheese, this under-30-minute recipe has everything you love about the classic Greek salad, but with the addition of pasta. What could be better than that?

Ingredients

  • Kosher salt
  • 1 lb. farfalle (or other pasta)

Dressing

  • ¼ cup extra-virgin olive oil
  • 3 Tbsp. red wine vinegar
  • ½ tsp. dried oregano
  • ½ tsp. garlic powder

Additions

  • 2 Persian cucumbers chopped into half moons
  • 1 cup cherry tomatoes halved
  • cup Kalamata olives pitted and chopped
  • ½ red onion chopped

Seasonings and Toppings

  • Freshly ground black pepper
  • 2 Tbsp. dill finely chopped
  • ½ cup crumbled feta

Instructions

  • In a large pot of salted boiling water, cook farfalle / pasta according to package directions until al dente. Drain and transfer to a large serving bowl.
  • Make dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano and garlic powder.
  • To serving bowl add cucumbers, tomatoes, olives and onions. Add dressing and toss until evenly coated. Season with salt and pepper and add dill, then top with feta.

Have leftovers? Lucky you! Store your pasta salad in an airtight container in the fridge for 2 to 3 days. If you want to make this ahead, you can make your pasta and throw all of your ingredients together—minus the dressing—and store them in an airtight container in the fridge the day before. Mix your dressing together and store it in the fridge until you are ready to serve your pasta, then toss it all together and serve.
