Garlic Herb Roasted Potatoes, Carrots, and Zucchini

olive oil

garlic

dried rosemary

tbsp
dried thyme
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the potatoes, carrots, zucchini, olive oil, garlic, rosemary, thyme, salt, and pepper.
Spread the vegetables in a single layer on the prepared baking sheet.
Roast for 25-30 minutes, until the vegetables are tender and golden brown, stirring halfway through.
Serve warm and enjoy!
