Ingredients

  • 4 medium potatoes

Aioli Sauce

  • 1 egg
  • 2 cloves of garlic finely chopped
  • 1 tablespoon of lemon
  • 3 cups olive oil

Brava Sauce

  • 2 tablespoons olive oil
  • 4 ripe tomatoes
  • teaspoon of sugar
  • Half a teaspoon of sweet paprika
  • pinch of cayenne
  • Sherry vinegar
  • Salt

Instructions

  • Peel the potatoes and wash them. Then, cut them into cubes.
  • Heat olive oil in a frying pan over medium heat. When the oil is hot, fry the potatoes until they are tender and then increase the heat and brown them.

Aioli Sauce

  • While the potatoes are cooking, we can prepare the aioli sauce. To do this, put the egg, the finely chopped garlic cloves, the lemon juice and half a cup of oil in the blender. Beat at medium speed for about 30 seconds.
  • When the sauce begins to thicken, ensure that the sauce is homogeneous. Then, add the rest of the oil and beat for a few more seconds.

Brava Sauce

  • For the brava sauce, after washing the tomatoes and removing the central part and seeds, cut them into four pieces and grate them.
  • Separately, in a frying pan heat two tablespoons of oil over low heat, and then add the tomato and fry it, adding a teaspoon of sugar, half of sweet paprika and a pinch of cayenne.
  • Raise the heat a little and let it cook for about 10 minutes. Then add a splash of vinegar, a little salt, stir, and the sauce is made.

Finish

  • When the potatoes are golden, remove them from the pan, placing them on a plate lined with kitchen paper, so that the excess oil can be absorbed. Then plate them and pour the sauces on top.
