Black Bean and Cheese Burritos with Chorizo Queso Sauce

Equipment

Ingredients

Chorizo Queso Sauce

  • 2 Tbsp olive oil
  • 1 9 oz pork Chorizo (I find it at Walmart)
  • ¼ onion chopped finely
  • 2 large jalapeño peppers chopped, retaining some seeds
  • 3 cloves fresh garlic chopped
  • 4 Tbsp butter
  • 4 Tbsp flour
  • 2 cups whole milk
  • 2 cups evaporated milk
  • 1 Tbsp ground cumin
  • 1 tsp oregano
  • 1 tsp chipotle powder
  • 1 tsp onion powder
  • ½ tsp salt
  • 4 cups shredded white Cheddar cheese

Burritos

  • 1 28oz can black beans
  • 1 15oz can black beans
  • 1 tsp chili powder
  • 1 tsp roasted ground coriander
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp chipotle powder
  • 1 Tbsp olive oil
  • ½ tsp oregano
  • 1 Tbsp ground cumin
  • 8 large (burrito-size) tortillas
  • cups pepper jack cheese

Instructions

Chorizo Queso Sauce

  • Heat 1 Tbsp olive oil in a large skillet on medium heat. Add chorizo, and cook, leaving it alone for a few minutes, letting it crisp up, about 10-12 minutes.
  • Remove Chorizo from pan, and strain on a paper towel.
  • Keep drippings in skillet, and add another Tbsp of olive oil. Add chopped onion, and jalapeño, and cook for a few minutes.
  • Add garlic, cook for a minute or two, then add butter and flour. Mix well, and cook until the flour taste is gone, a minute or so.
  • Add milk, and evaporated milk, then spices. Cook until the sauce starts to thicken. Stir well continuously.
  • Remove from heat, add Chorizo and cheese. Place back on heat, and mix well until melted.

Burritos

  • Preheat oven to 400℉
  • Open both cans of beans into a colander. Rinse the beans well, and add to the food processor. Add all spices and oil
  • Purée beans, spices, and oil until smooth.
  • Add tortillas to a plate, place a paper towel on top, and microwave for 20 seconds.
  • Take a tortilla, one at a time, add a generous scoop of bean mixture, and use a spoon to spread the mixture out to within about ½ inch of the edges if the tortilla. Add a portion of cheese to the top, and wrap the tortilla. Add the filled tortilla to the baking dish.
    Repeat until all eight tortillas are done.
  • Once the oven reaches 400℉, Bake the tortillas for 20 minutes until they are lightly browned and crunchy.
  • Serve, covered with the Chorizo Queso sauce.
