Sweet Smoky Zucchini Salsa

Ingredients
- 2 medium zucchinis diced
- 1 large tomato diced
- ½ red onion finely chopped
- ½ red bell pepper diced
- ½ yellow bell pepper diced
- 1 jalapeño pepper seeded and finely chopped
- 2 cloves garlic minced
- ¼ cup fresh cilantro chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the diced zucchini, tomato, red onion, red bell pepper, yellow bell pepper, jalapeño, and minced garlic.
- In a small bowl, whisk together the olive oil, lime juice, honey, smoked paprika, cumin, salt, and black pepper.
- Pour the dressing over the vegetable mixture and toss to combine.
- Stir in the chopped fresh cilantro.
- Taste and adjust seasoning if necessary.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature, with tortilla chips, tacos, or as a topping for grilled meats.
