These mini s'mores capture the flavor of a classic treat, without the fire, smoke and burnt sugar.
S’mores are one of those special treats that aren’t made often enough, likely because most of us don’t sit around a campfire very often. This mini s’mores recipe solves that problem, recreating the classic s’mores flavor without a campfire or any flame. Melted chocolate chips and dipping chocolate take the place of the chocolate bar, and a jar of marshmallow creme replaces bagged marshmallows. No smoky odor in your clothing, no mosquitoes—and no chance of accidentally burning the marshmallows! It’s all the fun of making s’mores desserts without straying too far from the original design.

Ingredients

  • 2 cups milk chocolate chips
  • ½ cup heavy whipping cream
  • 1 (14.4oz) pkg graham crackers quartered
  • 1 cup marshmallow creme
  • 2 (7 oz each) cartons milk chocolate for dipping

Instructions

  • Place chocolate chips in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; stir with a whisk until smooth. Cool to room temperature or until mixture reaches a spreading consistency, about 10 minutes.
  • Spread chocolate mixture over half of the graham crackers. Spread marshmallow creme over remaining graham crackers; place over chocolate-covered crackers, pressing to adhere.
  • Melt dipping chocolate according to package directions. Dip each s’more halfway into dipping chocolate; allow excess to drip off. Place on waxed paper-lined baking sheets; let stand until dipping chocolate is set. Store in an airtight container in the refrigerator.

Mini S’mores Variations

  • Use cinnamon graham crackers: Cinnamon graham crackers feature a light coating of cinnamon and sugar for added flavor. Use them in place of the usual graham crackers for a note of sweetened cinnamon.
  • Make way for cookies: Use cookies in place of graham crackers. Square or rectangular shortbread cookies work well for making these mini s’mores, and vanilla wafers are another good choice.
  • Add peanut butter: Spread peanut butter on half the graham crackers before adding the chocolate for a unique flavor combination. (Alternatively, mix 2 tablespoons of peanut butter into the marshmallow creme before spreading it onto the graham crackers.) Other nut butters, such as almond butter or pistachio butter, can be used in place of peanut butter.

How to Store Mini S’mores

Place the mini s’mores in an airtight container in the refrigerator, where they’ll keep for up to five days. Some graham crackers get a bit soft with the chocolate and the marshmallow creme between them, so it’s best to consume these within a couple of days.
Can you freeze mini s’mores bites?
Yes, you can freeze mini s’mores, and freezing them helps keep them firm. Place them in an airtight container and pop that into the freezer. Mini s’mores will keep for a couple of months if frozen. Thaw them in the fridge for a few hours or on the counter for 30 minutes before enjoying them. It’s best if you don’t let them get to room temperature, or they may be messy.

Can I use dark chocolate instead?

Yes, you can use dark chocolate instead of milk chocolate for these mini s’mores. Dark or bittersweet chocolate makes the chocolate stand out flavor-wise, without the milky aftertaste that some milk chocolate gives off. You could also use white chocolate or caramelized white chocolate if you like a very rich dessert.

To make assembling mini s’mores less messy, break out the bags! Piping bags or zip-top bags let you pipe marshmallow creme or very firm ganache onto the graham crackers. You don’t have to use a piping tip, but it does help with consistency. Try to pipe a line right in the middle of each graham cracker, then smoosh the graham crackers together so the lines meet and spread out as you gently push down.
