Harissa Butter Beans
Team butter beans up with a handful of other ingredients and in under 15 minutes you'll have a dependable, flavoursome side or main.

Ingredients
- 2 cloves garlic
- 4 sprigs flat-leaf parsley
- olive oil
- 1 (400g) can butter beans
- 1 Tbsp harissa paste
- ½ a lemon
Instructions
- Peel the garlic and finely slice with the parsley stalks, reserving the leaves. Place the garlic and parsley stalks in a non-stick frying pan on a medium heat with 1 tablespoon of olive oil, stirring regularly until lightly golden.
- Pour in the butter beans, juice and all, add the harissa, and simmer until you have a silky sauce consistency.
- Add the lemon juice, season to perfection with sea salt and black pepper, finely chop and sprinkle over the parsley leaves, and serve with lemon wedges, for squeezing over. Nice with halloumi or mackerel.
