Irish Bread (not Soda Bread)
This recipe is from my wife's dear friend of nearly 60 years, now sadly departed. She was her college "Roomie"My wife makes this bread every year, around St. Patrick's Day.
Servings: 3 small loaves in 8 inch bread pans, and (maybe) 2 loaves in larger bread pans.
Equipment
- 1 Large round cast iron frying pan
Ingredients
- 4 cups flour
- ¾ cup sugar
- 4 tsp baking powder
- ½ tsp salt
- 1 stick butter
- 1½ cups milk
- 2 eggs
- 1 heaping cup raisins
- 2 heaping Tbsp caraway seeds
Instructions
- Preheat oven to 350°F.
- Grease a large round cast iron frying pan.
- Melt the butter in a large glass bowl in the microwave.
- Sift flour, sugar, baking powder, and salt into a medium bowl.
- Measure the milk in a 2 cup measuring cup, and then add the eggs to the milk. Whisk with a fork.
- Add the milk and eggs to the melted butter, and mix well.
- Add flour mixture. A wooden spoon works well. The batter should be stiff.
- Add the raisins and caraway seeds, and mix in.
- Put the batter in the frying pan. Make a cross on the top with your finger, and bless the person or persons with whom you will be sharing this.
- Bake for 1 hour, or until a tester comes out clean.
- Cool on a rack for 10 minutes, or turn out immediately and serve hot.
