Instant Pot Beef Stew
There's nothing better on a chilly winter night than a hearty bowl of beef stew. This recipe combines season stewing meat with vegetables for a warm, savory dish, rich in flavor.

Ingredients
- 1 Tbsp olive oil
- 8 oz beef stewing meat
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 cup water
- 1 cup russet potatoes peeled and cubed
- 1 carrot cut into ½-inch pieces
- 1 stalk celery cut into ½-inch pieces
- 1½ Tbsp beef stew seasoning
(half a 1.25-ounce packet), or use homemade beef stew seasoning . - Frozen pearl onions to taste (optional)
- Frozen peas to taste (optional)
Instructions
- Set the Instant Pot to Sauté, and pour in the olive oil.
- Once the oil is shimmering, add the beef stewing meat and season with salt and pepper. Cook until browned on all sides, about 10 minutes, then press Cancel to turn off the Instant Pot.
- Pour in the water and scrape up any browned bits from the bottom of the pot.
- Add the potatoes, carrot, celery, and stew seasoning, and stir to combine.
- Lock the lid in place. Select Pressure cook, and adjust the pressure to High, and the time to 35 minutes. Close the valve.After cooking, let the pressure release naturally for 5 minutes, then quick release any remaining pressure.
- Once the float valve drops, open the lid and stir the stew.Serve warm.
