Hot and Sour Soup with Chicken
Servings: 6 to 8 people
Ingredients
- 3 oz (80 g ) carrot
- 5 pieces shiitake mushroom dried, and re-hydrated, or fresh, with stems removed
- 10 pieces dried wood ear mushroom re-hydrated
- 8 oz (225 g) firm tofu
- 1 large egg
- 4 oz (114 g) chicken breast
- 1 tsp minced ginger
- ⅛ tsp salt
- 1 tbsp corn starch
- 1 tbsp water
- 3 tsp oil
Cornstarch mixture
- ⅓ cup corn starch
- ½ cup water
Additions
- 8 cup unsalted chicken broth
- 2 tsp dark soy sauce
- 1 tbsp light soy sauce
- ¼ tsp sugar
- ½ tsp salt
- ⅓ cup black rice vinegar
- 1 tsp sesame oil
- 1 tsp white pepper powder
