Simple Raspberry Bars
These Raspberry Bars are easy to make, and delicious.
Servings: 24 bars
Equipment
- 9"x13" baking pan
- Stand mixer or other electric mixer
Ingredients
- ½ cup sugar
- 1 cup butter room temperature
- 2 cups flour sifted
- dash salt
- 1½ cups raspberry jam (More is really needed. If possible find an 18 oz. jar.)
Instructions
- Preheat oven to 350F.
- In the large bowl of the stand mixer, cream butter and sugar.
- Gradually mix in flour and salt. The batter will be very thick.
- Press ¾ of this mixture into an un-greased 9×13 pan. (The batter weighs about 20 oz; save 5 oz for crumbling.)
- Warm the jam slightly in a microwave to make it spreadable. Then, spread it over the crust, making sure that no jam touches the baking pan (or use parchment paper).
- Dot the remaining crumb mixture over the top.
- Bake for 40 minutes, or more.
- Cut into bars. Enjoy!
