whisk together the flour, salt, and instant yeast. Add the water. Using a rubber spatula, mix until the water is absorbed and the ingredients form a sticky dough ball. Pour a drop or two of oil over top and rub with your hands to coat.<\/span><\/div><\/li><li id=\"wprm-recipe-4700-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Cover the bowl with a damp tea towel or plastic wrap and set aside in a warm spot to rise for 1 to 1\u00bd hours, or until the dough has doubled in bulk.<\/span><\/div><\/li><li id=\"wprm-recipe-4700-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">If you are baking the pizzas right away (as opposed to refrigerating the dough for another day), place a Baking Steel or pizza stone in top third of oven and preheat oven to its hottest setting, 550\u00b0F. Be sure the Baking Steel heats for at least 45 minutes once the oven temperature reaches 550\u00baF.<\/div><\/li><li id=\"wprm-recipe-4700-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Cover a work surface or cutting board liberally with flour \u2014 use at least \u00bc cup and more as needed. The dough is very wet, so don\u2019t hesitate to use flour as needed. Turn the dough out onto your floured surface and use a bench scraper to divide the dough into 4 equal portions. With floured hands, roll each portion into a ball, using the pinkie-edges of your hands to pinch the dough underneath each ball. If you are not baking the pizza the same day, transfer each round of dough to a plastic quart container (or something similar), cover, and store in the fridge. (At this point, transfer the vessels to the freezer for up to 3 months. See notes above for thawing.) If you are baking right away, let the balls sit on their tucked-in edges for at least 30 minutes without touching.<\/span><\/div><\/li><li id=\"wprm-recipe-4700-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\"><strong>To Make the Pizzas:<\/strong> If using refrigerated dough, pull out a pizza round from the fridge one hour (or even 90 minutes if time permits) before you plan on baking. Dust dough with flour and place on a floured work surface. Cover the dough with a towel or plastic wrap to prevent it from drying out. (<strong>Update:<\/strong> I now let my dough balls rest in a lidded vessel or a pan covered with plastic wrap to ensure the dough balls do not dry out during the 60-90 minutes at room temperature.) Let rest untouched for 60 to 90 minutes.<\/span><\/div><\/li><li id=\"wprm-recipe-4700-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Handling the dough as minimally as possible, shape the dough into a 10\u2033\u201312\u2033 round. If the dough has proofed sufficiently, you should be able to pick it up and stretch it very easily using the back of your hands. Lay a sheet of parchment paper on a pizza peel, and pour a few drops of oil into the center of it. <em>(Note: the oil is optional. It\u2019s especially helpful if you find shaping dough using the backs of your hands tricky.)<\/em> Transfer the dough round to the parchment-lined baking peel.<\/span><\/div><\/li><li id=\"wprm-recipe-4700-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Top pizza as desired or <strong>to make the Margherita pizza:<\/strong> spread 2 ounces of tomato sauce over your pizza dough. Top with 3 ounces of mozzarella. Drizzle with olive oil. Season with a pinch of flaky sea salt. Shimmy the pizza, parchment paper and all into the oven. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\"><strong>To make the kale and cr\u00e8me fra\u00eeche pizza:<\/strong> Place the kale in a small bowl, drizzle lightly with olive oil, season with sea salt, and toss with your hands till the kale is coated in oil and salt. Spoon cr\u00e8me fra\u00eeche over the dough leaving a \u00bd-inch border or so\u2014I use 1 to 2 tablespoons per pizza. Sprinkle with the garlic and a handful of the grated Parmigiano Reggiano. Top with the kale. Shimmy the pizza, parchment paper and all into the oven.<\/span><\/div><\/li><li id=\"wprm-recipe-4700-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Bake pizza until top is blistered, about 5 minutes. Transfer to cutting board. Shower basil over the pizza Margherita. Cut and serve.
