non-seasoned sauce. If you like your Fearless Chicken Tikka Marsala more chunky use all diced or even skip out on one can to have a higher chicken-to-sauce ratio.<\/span><\/li><li class=\"wprm-recipe-ingredient\" style=\"list-style-type: disc;\" data-uid=\"6\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span>&#32;<span class=\"wprm-recipe-ingredient-unit\">Generous Dollop<\/span>&#32;<span class=\"wprm-recipe-ingredient-name\">something creamy<\/span>&#32;<span class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\">Coconut cream, coconut milk, heavy cream\u2026 anything fatty and creamy is perfect. I usually scrape the cream off the top of a can of coconut milk and discard the remaining coconut water. Adding the water thins the CTM too much.<\/span><\/li><li class=\"wprm-recipe-ingredient\" style=\"list-style-type: disc;\" data-uid=\"7\"><span class=\"wprm-recipe-ingredient-name\">rice<\/span>&#32;<span class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\">My husband is Japanese so we\u2019re rice snobs. We have a Japanese rice cooker (seriously, no English buttons) and use Kokoho Rose premium rice.<\/span><\/li><li class=\"wprm-recipe-ingredient\" style=\"list-style-type: disc;\" data-uid=\"8\"><span class=\"wprm-recipe-ingredient-name\">cilantro<\/span>&#32;<span class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\">The perfect topping.<\/span><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-373-instructions\" class=\"wprm-recipe-instructions-container wprm-recipe-373-instructions-container wprm-block-text-normal\" data-recipe=\"373\"><h3 class=\"wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\"><span class=\"ez-toc-section\" id=\"Instructions\"><\/span>Instructions<span class=\"ez-toc-section-end\"><\/span><\/h3><div class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-373-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Gather your ingredients first, including chopping garlic, dicing chicken, and opening cans. Have everything ready next to your stove because this puppy moves quickly.<\/div><\/li><li id=\"wprm-recipe-373-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Grab something to cook this in. Here\u2019s the order from best to worst: a shallow Dutch oven or braiser, a regular Dutch oven, a deep skillet way bigger than your face, a regular soup pot. I\u2019ll explain why in Cheats and Preferences.<\/div><\/li><li id=\"wprm-recipe-373-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Put the pot on the stove over medium-high heat, and add the fat. Let it melt and start to bubble the tiniest bit.<\/div><\/li><li id=\"wprm-recipe-373-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Add the aromatics and stir. Stir for no more than ten Mississippi\u2019s before moving on. Tiny garlic burns big.<\/div><\/li><li id=\"wprm-recipe-373-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Dump in the spices and stir for another 5-10 seconds. If for some reason, your pan is too dry, add more oil. The spices need to almost fry. It\u2019s a delight. Also don\u2019t stop stirring.<\/div><\/li><li id=\"wprm-recipe-373-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Stir in the tomato paste for another few seconds. At this point, you\u2019ve been stirring for less than a minute, and you won\u2019t believe the magical smells coming from so little effort. Don\u2019t be alarmed that this looks like a paste; it\u2019s supposed to &#8211; a flavor bomb paste.<\/div><\/li><li id=\"wprm-recipe-373-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Add the diced chicken (that you already generously seasoned with salt), and stir it into the flavor bomb. The chicken will get coated and pick up a little extra flavor from direct contact with the pan. In this case, keep stirring the chicken until fully coated. We leave chicken alone when we\u2019re saut\u00e9ing it, but this situation is different. Stir so the flavor bomb doesn\u2019t burn.<\/div><\/li><li id=\"wprm-recipe-373-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Dump in the canned tomatoes and stir well so that the flavor bomb becomes friends with the entire dish. Add several healthy pinches of salt, the \u201csomething creamy,\u201d and let it simmer for twenty minutes, stirring once or twice throughout. If it\u2019s bubbling aggressively enough to pop on your stove, turn the heat down. You need to still see bubbles but not crazy ones. Feel free to put a lid over half the pot, especially if you\u2019re using a Dutch oven. A gentle simmer will keep your chicken from getting tough, too.<\/div><\/li><li id=\"wprm-recipe-373-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Taste it. If it doesn\u2019t sing and make you want to pay me money, it needs more salt.
