As soon as it boils, remove from heat and pour the mixture over the potatoes. Cover the bowl of potatoes and let sit for at least one hour.<\/div><\/li><li id=\"wprm-recipe-10350-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">After at least one hour, gently stir in the oil and season with salt and pepper to taste. If too much liquid remains, use a slotted spoon to serve. Serve garnished with fresh chopped chives. Serve at room temperature. Note: This potato salad is best the next day (remove from fridge at least 30 minutes before serving).<\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n<div id=\"recipe-10350-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\"><span class=\"ez-toc-section\" id=\"Notes\"><\/span>Notes<span class=\"ez-toc-section-end\"><\/span><\/h3><div class=\"wprm-recipe-notes\"><h4 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Key_German_Potato_Salad_Ingredients\"><\/span><strong>Key German Potato Salad Ingredients<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h4>\n<span style=\"display: block;\">The ingredients in a traditional Swabian potato salad recipe are few and simple, but there are a few tricks that are absolute\u00a0<em>musts<\/em>\u00a0for getting it right. \u00a0Here are the key ingredients:<\/span><div class=\"wprm-spacer\"><\/div>\n<ul class=\"wp-block-list\">\n<li><strong>The right potatoes<\/strong>:\u00a0 This is the biggest challenge here in the U.S. \u00a0In Germany you can find potatoes that you simply cannot find here. \u00a0Unlike Russet potatoes, for example, which are flaky, mealy, and generally flavorless, the kind used in potato salads in Germany are firm, deep yellow in color, buttery and flavorful. \u00a0And they keep their shape well. \u00a0The closest you can get to those here are Yukon Gold potatoes and those are the ones I recommend for this recipe. \u00a0Also, be sure to boil the potatoes in their skins \u2013 don\u2019t peel them first.<\/li>\n<li><strong>Beef broth<\/strong>: For the best flavor there is no substitute, it must be beef broth. \u00a0And it must be very strong beef broth. \u00a0And it must be hot when you pour it over the potatoes so they soak it up. \u00a0Make sure you let the potatoes sit for at least a full hour after you pour the broth over. If you\u2019re vegetarian or vegan you can substitute vegetable broth.<\/li>\n<li><strong>German mustard<\/strong>: I know the recipe doesn\u2019t call for much, but it must be German mustard (mild) if you want it to taste the way it\u2019s supposed to. \u00a0The kind I use in most of my German recipes is the\u00a0<strong><a href=\"https:\/\/www.amazon.com\/gp\/product\/B000G68IES?ie=UTF8&amp;camp=1789&amp;creativeASIN=B000G68IES&amp;linkCode=xm2&amp;tag=thedargou09-20\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Alstertor D\u00fcsseldorf Style Mustard<\/a> <\/strong>.<\/li>\n<li><strong>Vinegar<\/strong>: No apple cider or balsamic vinegar. \u00a0It needs to be the strong white vinegar. \u00a0A vinegar very commonly used in Germany for this salad and salad dressings is called\u00a0<strong><a href=\"https:\/\/www.amazon.com\/gp\/product\/B01LXR64D5?ie=UTF8&amp;tag=thedargou09-20&amp;camp=1789&amp;linkCode=xm2&amp;creativeASIN=B01LXR64D5&amp;th=1\" target=\"_blank\" rel=\"nofollow noopener\">Essig Essenz<\/a><\/strong>\u00a0(can also be found in some Asian grocery stores \u2013 Koreans like to use it for kimchi). \u00a0It\u2019s super concentrated vinegar and you only need a very little of it. \u00a0If you have access to this vinegar, you would add just a teaspoon or two in addition to the white vinegar, and reduce the amount of white vinegar accordingly. \u00a0Of course you\u2019ll always want to do a \u201ctaste test\u201d before pouring the final mixture over the potato salad.<\/li>\n<li><strong>Onions<\/strong>: You want them crunchy but not overly so, and you want them saturated with flavor. \u00a0So add them to the beef broth\/vinegar mixture when you heat it up.<\/li>\n<li><strong>Oil:<\/strong>\u00a0Lots of it. \u00a0In olden days homemade beef broth would be used which contained plenty of fat. \u00a0Nowadays we mostly use store-bought broth in cans or beef bouillon cubes\/granules which are all void of fat. \u00a0So adding oil is absolutely essential to achieving the right texture. \u00a0As my German mom says, <em>Schw\u00e4bischer Kartoffelsalat<\/em> needs to be \u201cschmalzig\u201d. Use a neutral-tasting oil.
