Ingredients

  • 1 jar California Sun Dry Julienne Cut Sun-Dried Tomatoes in oil
  • 1 pkg Chile Lime Snack Thins
  • 1 yellow onion diced
  • 8 oz mushrooms
  • 1 can can kidney beans
  • 1 Tbsp cumin
  • 3 Tbsp tomato paste
  • 2 Tbsp chili powder
  • 5 sprigs parsley

Instructions

  • Heat oil over medium heat in a soup pot.
  • Add onions and mushrooms to the pot and cook until onions are translucent.
  • Add California Sun Dry Julienne Cut Sun-Dried Tomatoes, water, beans, seasonings, and tomato paste. Stir well and cook for 10-15 minutes or until thickened.
  • Pour into a bowl and top with Snack Thins.
  • Top with parmesan and enjoy!
