Slow Cooker Coconut Chicken Curry
Even faster than delivery, this slow cooker version of a takeout favorite is ready as soon as you walk in the door. Just add the ingredients before you head out for the day.

Ingredients
- 1 medium onion chopped
- 4 cloves garlic minced
- 1 (1 inch) piece ginger, minced
- 1 (1.5lb.) package 1.5-lb. package boneless, skinless chicken breasts
- 1 (13.5oz.) can unsweetened coconut milk
- 3 Tbsp. tomato paste
- 3 Tbsp. curry powder
- 2 tsp. paprika
- 1 tsp. chili powder
- 1 Tbsp. lime juice
- 2 (8.8oz) packages Nature's Promise 90 Seconds Brown Rice or equivalent
- Chopped cilantro to serve
Instructions
- To a 6-qt. slow cooker, add onion, garlic, and ginger. Cut chicken into 1″ pieces and add to slow cooker.
- In a large bowl or measuring cup, combine coconut milk, tomato paste, curry powder, paprika, chili powder, and lime juice. Season with salt and pepper. Whisk to combine, then pour over chicken in slow cooker. Cover and cook until tender, on low 6 to 7 hours or high 4 hours.
- Cook rice according to package directions and divide among bowls. Divide curry over rice. Serve with chopped cilantro.
