Potato and Vegetable Tart with Cheese and Spinach [Video]

Ingredients

Option 1: Crispy Potato Tart with Spinach and Cheese: This tart is a fresh alternative to the classic pastry base, where a crispy potato base holds the filling. (4 servings)

  • 500 g / 1 lb waxy potatoes
  • 300 g / 10oz fresh spinach
  • 100 g / 3½ oz grated cheese e.g., mountain cheese, Emmental, or feta
  • 4 eggs
  • 1 onion
  • 1-2 cloves of garlic
  • Nutmeg
  • Salt and pepper
  • 1 tbsp olive oil

Option 2: Creamy Spinach Quiche with Feta Cheese and Vegetables: This version uses a classic pastry and a creamy filling with diced vegetables.

For the pastry:

  • 250 g / ½ lb flour
  • 125 g / 4 oz cold butter cubed
  • 1 egg
  • a pinch of salt.

For the filling:

  • 300 g / 10 oz fresh spinach
  • 200 g / 7 oz feta cheese cubed, or shepherd’s cheese, 100 g grated Gouda
  • 1 onion
  • 1 clove of garlic
  • 3 eggs
  • 200 g / 7 oz sour cream
  • nutmeg
  • salt pepper.
  • 1 red bell pepper and/or 1 small zucchini. (optional)

Option 3: Quick Potato and Spinach Gratin: When time is short, a gratin is an excellent alternative.

  • 1 kg / 2¼ lb waxy potatoes
  • 400 g / 14 oz fresh spinach
  • 1 onion
  • 1-2 cloves of garlic
  • 200 g crème fraîche or cream cheese
  • 150 g grated cheese
  • Nutmeg
  • Salt and pepper
  • a little vegetable stock (optional)

Instructions

Option 1: Crispy Potato Tart with Spinach and Cheese

  • Peel the potatoes and boil them in salted water until tender. Then drain.
  • Finely chop the onion and garlic and sauté them in a pan with a little olive oil.
  • Wash the fresh spinach, roughly chop it, and add it to the onion and garlic mixture in batches until wilted. Allow any excess liquid to evaporate.
  • Grease a springform pan. Place the cooked potatoes in the pan and flatten them with a glass to form a firm base.
  • Season the potato base with salt, pepper, and grated nutmeg.
  • Spread the sautéed spinach evenly over the potatoes.
  • Sprinkle the grated cheese over the spinach.
  • Using a spoon, make small indentations in the spinach and cheese mixture and crack an egg into each indentation. Season with salt and pepper.
  • Bake the tart in a preheated oven at 180°C (350°F) for about 25–30 minutes, or until the eggs are set and the cheese is golden brown.

Option 2: Creamy Spinach Quiche with Feta Cheese and Vegetables

    Pastry:

    • In a bowl, combine the flour, cold butter, and salt until the mixture resembles coarse crumbs. Add the egg and quickly work it into a smooth dough. Wrap in cling film and chill for 30 minutes.

    Filling:

    • Finely chop the onion and garlic and sauté them in a little oil. Add the spinach and let it wilt. Then drain well and squeeze out any excess liquid. Optionally, finely dice other vegetables and sauté briefly.
    • Whisk together the eggs, sour cream, salt, pepper, and nutmeg. Stir in the grated Gouda and the spinach. Finally, mix in the feta cheese cubes.
    • Roll out the dough and line a greased quiche dish with it. Spread the filling evenly over the dough.
    • Bake the quiche in a preheated oven at 180°C (350°F) for about 35–40 minutes, until the filling is set and the surface is golden brown.

    Option 3: Quick Potato and Spinach Gratin

    • Peel the potatoes and slice them thinly.
    • Preheat the oven to 180 °C (350 °F).
    • Chop the onion and garlic and sauté them in a pan. Add the spinach, let it wilt, and drain well.
    • In a bowl, mix the crème fraîche, grated cheese, nutmeg, salt, and pepper. Gently fold in the spinach.
    • Layer a casserole dish with alternating layers of potato slices and the spinach-cheese mixture, finishing with a layer of potatoes. Optionally, add a little vegetable stock.
    • … Sprinkle the gratin with the remaining cheese and bake for about 45–50 minutes, until the potatoes are tender and the gratin is golden brown.
