Orzo & Garbanzo Bean Salad

Orzo salad is always a favorite, and this recipe helps making it easy. It uses garbanzo beans and BRIANNAS Blush Wine Vinaigrette dressing for even more delicious flavor!

Ingredients

  • 4 cups chicken broth or water
  • cup Orzo pasta
  • 1 can organic garbanzo beans (chick peas) drained and rinsed
  • cups mixed red and yellow teardrop or grape tomatoes halved
  • other vegetables, such as slices of zucchini, summer squash, bell peppers, etc. (optional) (don't overdo)
  • ½ cup fresh basil chopped
  • ¼ cup fresh mint chopped
  • ½ cup BRIANNAS Blush Wine Vinaigrette Dressing (or use this home-made version)
  • Salt and fresh ground black pepper to taste

Instructions

  • Bring broth to a boil in a large heavy sauce pan over high heat. Stir in orzo.
  • Cover partially and cook stirring frequently until the orzo is tender but still firm to the bite (about 7 minutes.)
  • Drain and transfer to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the rest of the ingredients and enough BRIANNAS Blush Wine Vinaigrette Dressing to coat. You may not use all of the dressing.
  • Season the salad with salt and pepper to taste. This may be served chilled or at room temperature.

From the original recipe: ‘This delicious salad was given to us by Patricia in Burbank, CA. She states, “this is one of the most addictive pasta salads I make.” She grows her own tomatoes, mint and basil and keeps the other ingredients on hand so she can “whip it up” at a moment’s notice. ENJOY!’
Bryan’s Notes:
I made this and couldn’t find Brianna’s Blush Wine Vinaigrette Dressing at our local supermarket. So I found a home-made recipe online, added the recipe to this website (here), and used it instead.
I found the recipe to be delicious. The dressing and herbs made all the difference. But at least in the version I made, I felt it was too heavy on Orzo, and too light on other veggies, so I’ve added an optional item in the Ingredients to try to help compensate.
