High Protein Egg and Cheese Bake

High Protein Egg and Cheese Bake

This method utilizes the Cottage Cheese Tortilla Quiche Bake technique. Blending eggs with cottage cheese creates a fluffy, high-protein base that mimics traditional pie filling while keeping the calories low. We also offer a Yogurt alternative to Cottage Cheese.
Here, they are baked in curly/fluted tortilla crust mold.
This is a great choice for breakfast or a brunch.

Equipment

  • Curly/Fluted Tortilla Mold
  • Air Fryer (Our air fryer is like a miniature oven, and is ideal for baking here.)

Ingredients

  • 1 fajita-size tortilla (use a low-carb/high-protein flour tortilla for extra protein)
  • 2 large eggs + ¼ cup liquid egg whites (or add another egg in place of the egg whites)
  • ⅓ cup low-fat cottage cheese, or plain Greek yogurt (unblended or blended smooth)
  • ¼ cup cooked shredded chicken breast or browned turkey sausage (optional, if you wish a veggie dish))
  • salt and freshly-ground black pepper to taste
  • 2 tbsp shredded Mozzarella or Cheddar cheese
  • Handful chopped fresh spinach (or well-drained frozen spinach0
  • Handful diced bell peppers
  • 2 grape, cherry, or little tomatoes halved, or cut into small pieces

Optional Vegetable Additions

  • 2 spears asparagus cut into ¾-inch pieces, and lightly parboiled (I put them in a small dish and microwave them until crisp-tender)
  • 1 or 2 leaves fresh basil chopped, or chiffonaded
  • other vegetables to taste (your choice)

Instructions

  • Prepare the Mold: Preheat your oven to 375°F (190°C). Lightly spray your curly tortilla mold with olive oil spray.
  • Shape the Crust: Press the fajita tortilla firmly into the center of the curly mold. Gently pleat and fold the edges into the wavy "curly" grooves.
  • Mix the Filling: In a small bowl, whisk the eggs, egg whites, cottage cheese (or yogurt), salt, and pepper together until fully mixed.
  • Assemble: Drop your chopped spinach, peppers, and chicken/sausage into the bottom of the tortilla crust. Pour the egg and cottage cheese mixture right over the top. Sprinkle the shredded cheese over the top.
  • Oven Bake: Place the mold on a baking sheet. Bake for 20 to 25 minutes until the center is completely set (no longer jiggles) and the exposed curly edges of the tortilla are golden brown and crispy.

Notes

Pro-Tips for Fajita-Size Tortillas in Curly Molds

  • Prevent Tearing: Fajita tortillas are smaller (usually 6 inches) than burrito tortillas (8–10 inches). If your tortilla is stiff, microwave it between two damp paper towels for 15–20 seconds before putting it in the mold so it bends easily into the waves without breaking.
  • Mind the Volume: Because a fajita tortilla creates a shallower bowl than a burrito tortilla, be careful not to overfill the egg mixture, or it will overflow the wavy edges.
