Ginger Beef with Onions and Peapods

Ingredients

  • 3 medium onions thinly sliced
  • 1 lb beef steak (fillet or rump)
  • ½ tsp salt
  • 2 tsp sugar
  • dash pepper
  • 4 tsp cornstarch
  • 2 Tbsp soy sauce
  • 2 Tbsp dry sherry
  • cube chicken stock
  • 4 Tbsp vegetable oil
  • 2 slices ginger shredded
  • ½ lb peapods

Instructions

  • Cut beef into matchstick strips. Sprinkle salt, sugar, pepper, and half the cornstarch over the beef and work them in. Add soy sauce, and half the sherry, and marinate for 15 minutes. Mix remaining cornstarch and stock cube in 3 Tbsp water and remaining sherry, and put aside.
  • Heat half the oil in a wok or large skillet. When hot, add the onions, peapods, and ginger, and stir-fry over high heat for 3 minutes. Remove and put aside.
  • Add the remaining oil to the skillet. When hot, pour in the marinated beef and marinade, and spread it well out. Stir-fry for 1½ minutes. Return the onions and peapods, toss and stir-fry together for ½ minute. Add the cornstarch mixture, stir-fry for another 15 seconds, and serve immediatelyon a warmed serving dish.
