Chipotle Pico de Gallo

Ingredients
- 1 lb ripe tomatoes seeded and diced
- 2 garlic cloves minced
- 1 small red onion minced
- 1 jalapeño pepper seeded and minced
- 1 chipotle chili in adobo minced
- Juice of 1 lime
- ½ cup fresh cilantro
Instructions
- Mix all ingredients together in a bowl. Season to taste with salt.
- Let stand 1 hour at room temperature to allow flavors to develop. Serve.
