African Chicken Peanut Soup

This is a delicious, flavorful soup.
NOTE: This version has been superseded by a new version that omits the Healthy Choice Chicken and Rice cans of soup, and turns it into a true Gluten-free version. See African Chicken Peanut Soup with Rice (Gluten-free)

Ingredients

  • Cooking Spray
  • cups cubed and peeled sweet potato
  • ½ cup chopped onion
  • ½ cup diced red bell pepper
  • 2 garlic cloves minced
  • 1 jalapeno pepper seeded and minced
  • 2 cups chopped cooked chicken breast about 8 ounces
  • 1 cup bottled salsa
  • ½ teaspoon ground cumin
  • 4 cups chicken broth
  • 2 (15oz) cans chicken with rice soup such as Healthy Choice, undiluted
  • 1 (15oz) can black beans drained
  • cup creamy peanut butter

Optional ingredients

  • carrots diced
  • celery chopped

Instructions

  • Place a large Dutch oven coated with cooking spray over a medium-high heat until hot.
  • Add sweet potato, onion, bell pepper, garlic, jalapeno, and carrots and celery (if using). Sauté 5 minutes.
  • Stir in chicken and next 5 ingredients (chicken through beans)
  • Bring to a boil. Then reduce heat and simmer 10 minutes.
  • Add peanut butter, stirring with a whisk
  • Cook 2 minutes.
