Sun-Dried Tomato Chili

Whether you are looking for a satisfying meal on a chilly evening or a crowd-pleaser for any gathering, this chili is the perfect dish.
Ingredients
- 1 jar California Sun Dry Julienne Cut Sun-Dried Tomatoes in oil
- 1 pkg Chile Lime Snack Thins
- 1 yellow onion diced
- 8 oz mushrooms
- 1 can can kidney beans
- 1 Tbsp cumin
- 3 Tbsp tomato paste
- 2 Tbsp chili powder
- 5 sprigs parsley
Instructions
- Heat oil over medium heat in a soup pot.
- Add onions and mushrooms to the pot and cook until onions are translucent.
- Add California Sun Dry Julienne Cut Sun-Dried Tomatoes, water, beans, seasonings, and tomato paste. Stir well and cook for 10-15 minutes or until thickened.
- Pour into a bowl and top with Snack Thins.
- Top with parmesan and enjoy!
